Abstract The aim of this work is to define and validate innovative optical systems for the analysis of several qualitative parameters of three different fruits typical of the Valtellina area: apples, blueberries and grapes. This work tries to develope technologies which could be used directly in the field to define the best moment for harvesting. The Institute of Agricultural Engineering built and tested a portable device for the optical non destructive estimation in the visible-near infrared range (445-970 nm) of qualitative indexes, such as sugar contents, firmness, acidity and nutraceutical indexes, such as anthocyanins, flavonoids, polyphenols and ascorbic acid. Fruits are invested by a luminous radiation and the reflected component is measured by a spectrophotometer and registered by a software.
